Grilling Season is Here
I love to grill, and I prefer charcoal vs gas. As my grilling is usually just for two, it seems a waste to fire up a big grill, you know? I've been looking around and found the Lodge Logic Hibachi-Style Grill, which is perfect for two.
It reminds me very much of the hibachis used in Japan. In fact, there's a whole bunch of restaurants there that just serve Yakitori; which is basically any type of grilled meat on a stick. Paired with a nice cold beer on a hot summer day - heaven!

Yakitori
Ingredients
- 2 boneless/skinless chicken breasts or thighs, cut into 1 inch cubes
- 1 bunch green onion or leek, washed, trimmed and cut into 1 inch pieces
- 3 tablespoons soy sauce
- 2 tablespoons sake
- 3 tablespoons mirin
- 1 tablespoon sugar, honey, or maple syrup
- pinch of dried ginger
Directions:
- Soak about 20 small bamboo skewers in water.
- Preheat grill.
- Mix sugar, sake, mirin, and soy sauce in a pan, and heat it just enough to melt the sugar. Take it off the heat and add the meat, letting it marinate for a bit.
- Skewer 3 or 4 pieces of chicken, alternating with a piece of leek, on each wooden stick.
- Grill the skewered chicken over hot coals, basting with teriyaki sauce until the chicken is cooked, about 3 minutes per side.
Note: Instead of chicken, you could use shrimp, scallops, beef...and if you REALLY want to get adventurous...chicken hearts are yummy!
